During OoBEs you can have experiences in which you are omniscient, like in a Satori or Samhadi, but all of that knowledge won't fit into your human brain. You might know that you knew things then that you don't know now, but not the specifics.

In answer to your second question, I can only speak to my own experience. I have only brought back strange energies or some sorts of information, nothing material.

THe closest reference I have ever heard, is of bi-location in a different shape - bi-locating as a cat, raven, etc.

Changing the physical body itself into a different shape, however, violates so many material laws that I don't think it's possible. Bi-location is essentially the same concept, and although the physical laws behind it have not yet been addressed by science, it's more probably than transmuting an already physical body into another shape.

What I have experienced that comes closest to this is achieving enlightenment. The way to explain it best is that I was like inside an egg that was infused with all the energy of my being. I basically trancended this form, as though the egg opened up and released my higher form to a level that I can basically describe as the internet. Its a loose analogy but basically it was like I could see the cosmic harmony if the universe and every little thing I looked at sort of like bits of information traveling through wireless and broad band connections through satelites and back to servers and computers. Only I was the internet (along the lines of this analogy) with full self awareness.

This brings into the physical nature of the astral plains. Although I cannot site here and tell you with scientific knowledge what I can say is that even though these two plains coexist and that we are composed of both physical and astral energy, you cannot bring astral matter back into this world anymore than you can take physical matter with you into the astral plains (but you can take an object's astral matter with you). Bringing astral matter back to physical plain is a form of transmutation of matter - changing it from one state that can be percieved on the astral, to a state that it can be percieved on the physical.

You can physically shape shift your own aura. And by doing so that can alter the way other people's energy interacts with your own and maybe even have a less subtle impact on how people act towards you.

1. As others have said, omniscience isn't something one can easily retain. Vague ideas, rush of thoughs, hypersensitivity to sensory input, etc. I've yet to find a way to put it in words; others have told me the same thing. It's too big to describe in a meaningful way. It's like asking a 3 year old about details of international banking laws.

2. I've no knowledge of physical objects being brought back. In the physical universe you have to contend with conservation of energy, mass and momentum. Hard to overcome. Energies, emotions, even spirits, on the other hand, can easily come back with you whether you want them to or not. Ward yourself appropriately. It's not always bad - I've had a "hitchhiker" for a long time now, and Its not a bad thing, even if it is a bit unnerving at times.

3. I've never heard of a physical shapeshift. Mental shifting is indeed possible (i.e. taking on aspects of other animals or people in one's mind, for example, basically channeling) as is bi-location. I tend to end up in a badger for some reason when this happens to me.
