This has bothered me for like 10 years yet I've never even thought of asking it. It just occured to me today and well, I'm asking it now:

Why does most asians are more physically agile and flexible than most caucasians?

Because they all study martial arts as children? *bah-dum tisch*

There are no conclusive studies, but probably the same reason black guys tend to make better athletes and caucasians, well... have more money? Obviously there are exceptions, but in both cases theres a long cultural history to support aptitude.

I've met rather inflexible asians, though - things like that are always general racial (more often cultural) trends.

VD said it. In the east, people are taught more marital arts and they styles they teach tend to focus on wholistic body strength and agility. Where as in America, at least, most athletes like boxers and football players, focus on specific areas of their bodies. That and the average American probably isn't as physically active as your average Asian. I know I have a tendency to be pretty lazy and avoid physical labor when possible. But I also do pratice martial arts.
